So we did it and tomorrow we open our doors…
It’s 22.57 on Sunday the 8th of May 2016 and we have just printed our menus ready to hand to our guests tomorrow. It’s a bit surreal to be honest. Less than two months ago we signed on the dotted line to take on a lease for 3, High Street and now it is far more than an address.
We have stripped paint (and plaster board), filled holes, torn up carpet, ripped out the bathroom, sinks and counter… at this point we wondered what we had done. On the 17th March 3, High Street looked like a cafe and we had turned it into a building site.
Gradually things started to happen; new counters went in, paint went on the walls, a new floor was laid, a new bathroom suite plumbed in, shelves and decorations went up, tables and chairs were purchased and eventually our name appeared above the door. Out of nowhere in the space of the last week our building site has transformed into the cafe we imagined it would be.
We tried to use and reuse as much as possible and managed to find most of our purchases in a variety of charity shops and charitable projects around the South West. We met with suppliers to, wherever possible, buy locally and responsibly while still guaranteeing top quality produce.
Aymen has joined us as our front of house and has already whipped us into shape – he is a fabulous host and we are over the moon to have him on board. James starts with us next week as our cook three days a week, we have already sampled some of his dishes that will feel very at home on our menu, we are looking forward to getting to know James better.
So many friends and family helped us along the way with guidance, gifts, time, skills and their support that we thought the best way to thank them was to practice on them in advance of the real thing! We opened yesterday morning for a trial breakfast and, bar a couple of hic ups, it went really well; reassuringly well. Today has been spent cleaning, touching up the paint work and preparing the food for the week ahead.
Tomorrow morning, at 7.30am we will roll up the blinds, position our freshly painted A-board outside our door and invite people to relax and enjoy our food, drinks, service and atmosphere – we just hope we’ve got it right for them.
